I think it might have been a lot easier if you had used separate MQTT topics for each LED.

It wasn't actually about mqtt at all, or about Arduino code. It was about how to convert the IR sensor values into appropriate payload values (which were to be sent via mqtt). The deleted posts were not relevant.
