Is it OK to delete the node-red-web-nodes directory once the Dropbox node has been installed?

No!, that comes later when the new version is published to npm.

As @Colin has suggested;

Once it has been released to npm then

npm remove node-red-node-dropbox
npm install node-red-node-dropbox

and you can delete the node-red-web-nodes folder.
