Out of the box, no. But I'm sure there are some contrib nodes that can provide COAP support.
A quick search in the flow library yields some results.
You could try this one: node-red-contrib-coap (node) - Node-RED

Unfortunately I am not familiar with COAP in detail, so I can't help you any further but pointing you in some direction regarding the contrib node.
I'd suggest you just try it with your use case and see if it works.
