I teach IoT in evening school and we use Raspberry pi and ESP8266, why?
Because Raspberry pi kit costs some 70€ and ESP8266 3€, so if you need more sensors, you can add easily ESP8266, just 3€, than again Raspberry pi, 70€. And most cases when people add first sensor, they soon notice "I could measure this too, and that, and control that light, this motor too"
Other reason is that if you connect sensor wrong ,it could broke measurement device too, 3€ vs 70€.
I hope you understand these points and it is up to you what you do or don't
