Ui_table : how to set 'text' for each cell in the table

With ui_table I need to add a 'text' element for each cell in a particular column. Normally a 'text' can be added with the HTML definition for table elements. How can this be done with the ui_table?
The template offers the options to set width, alignment and some HTML presets, but nothing for "text".
