Zigbee2mqtt how to set up

I am starting with sonoff dongle and zigbee2mqtt.
For my first steps I got a LEDVANCE Classic E27 MULTICOLOR.

I am able to switch on and off, brightness, color temp, and colour with node-red mqtt nodes.
But I don't understand how the bridge and the other nodes of node-red-contrib-zigbee2mqtt works.

I would very much appreciate getting some help or a sample flows

I can't answer your question, but just saying that I don't use that node. I use the standard MQTT nodes with zigbee2mqtt, rather than using a non-core node. For me the contrib node doesn't do anything particularly useful.

Yes, especially if you use the "experimental" flag to get individual topics in Zigbee2MQTT in addition to the aggregate JSON topic.
