Hello everybody! I was wondering if it was somehow possible to build a config node that allows only one instance of itself at any time.
Maybe there is some obvious way but my google and forum research did'nt yield anything on it.

No, there's no quick and easy way to do that.
It has come up a couple times before and something we should look at... but not going to happen very soon.

Is it maybe possible to have nodes that are using a config node to have a default config node set whenever an instance of them gets created?
