I don't have one of these but they are supported by zigbee2mqtt; SONOFF SNZB-01P control via MQTT | Zigbee2MQTT
If you ever get the matter stuff going you could make a virtual matter device using MQTT to set the values.
Alternatively, there is ZigBee matterbridge: GitHub - Luligu/matterbridge-zigbee2mqtt: Matterbridge zigbee2mqtt plugin that automatically converts all your ZigBee devices into matter devices.
I have the Zigbee 3.0 USB Dongle Plus–ZBDongle-E, connected with an Odroid-C2 and powered by Zigbee2MQTT
Do you use an SNZB-01P switch with it?
It is zigbee and that button is nothing exotic, it is supported by zigbee2mqtt
The dongles mentioned are coordinators, which are fairly standard. The sonoff dongle, specifically the P version works out of the box with z2m. The E version may need additional flashing. At the moment the SMLIGHT SLZB-06 may be the 'best' coordinator available on the market.

In the plugin config add each switch device to the lightList or outletList if they don't show up like switch (Matterbridge uses a modified switch device type without client cluster that Alexa doesn't recognize).
So I bought a Sonoff Zibee 3.0 USB Dongle Plus and got it up and running
I have other questions now but I'll do a bit of searching and if I can't find an answer I'll start a new thread
I have used one of those for three years and have had absolutely no problems with it.
