Anyway to have a map (key/value pairs) on the config for a node?

I'm creating a new node. And I need to be able to enter in a map of key/value pairs as part of the configuration. They should be able to add/remove the pairs.

Is there such an animal in the available input types?

If you look at the source code for something like the change node you should get some clues I think.
