OK I did another testrun without charts for about 1h.
Still the same problem. After some time (starting at around 10 min.) I get the "connection lost" popup, screen turns black and immediately comes back. All gauges regain their values starting from 0.
i tried to catch it on a screencast.
Whats strange is that the data drops are at different times for every sensor and seem to appear totally random. Also not consistent with the "connection lost" problem. It looks like the data is stored into my txt files even the connection is lost. So there might be two different problems here.
Looking at the log file, nothing unusual happening there.
What changed when i removed the chart was the crash of the chromium browser. Browser remaind stable during the whole testrun.

Your flow credentials file is encrypted using a system-generated key.
If the system-generated key is lost for any reason, your credentials
file will not be recoverable, you will have to delete it and re-enter
your credentials.
You should set your own key using the 'credentialSecret' option in
your settings file. Node-RED will then re-encrypt your credentials
file using your chosen key the next time you deploy a change.
