You can try removing some packages from this location, to see if it clears up the issue.

Within : C:\Users\Steve\.node-red
npm uninstall <package-name>

.node-red is the users directory where user nodes and flows are stored, so work carefully in here

I found it strange that it affected the core of Node RED,
hence why we were looking at Node RED itself - but hey ho!
