In my opinion, the best use for this technique would be to automatically display in-line flows in both Discourse and the Flows library. Lately, I have been playing around with Mermaid myself. It looks like code blocks already support many different display formats (e.g. Markdown, Javascript, Json, Mermaid, PlantUML, etc) so it makes me wonder how feasible it is to extend support to the NodeRED flows syntax? Ideally it would be rendered as an SVG diagram with a "copy" button that puts the flow source onto the clipboard.
