Hi, I need help to create a flow for the one highlighted in yellow.
Basically, when my guy click on the "stop", first a pop up message will as, ARE YOU SURE? Then, If my guy click "yes" to the previous output, another pop up will appear and he must type a reason. Then he have to click "ok". And the message he type will be the payload.

Assuming you are using node-red-dashboard (which may not be the case in which case ignore this) then start by looking at the dashboard notification node.
