Welcome to the forum. This problem has been seen by others. See Node-red v3.0.0 Pi - trying to compare setting.js gets 'No such file or directory'

If you run this command it will probably get you going again. sudo npm install -g --unsafe-perm node-red

Indeed this is the same problem. Will follow that post for updates.
