I'm going to respond again (I used to participate as ODwyerPW, but now I use my company name of SonoraTechnical... I'm the same guy).
I have learned how to use the Node-RED-contrib-i2c i2c-out node to send multiple character commands to Atlas-Scientific Circuits over i2c.
