So, I can say thank you all so much for your help, its all up and running ( after running the node-red install script)
I'm assuming my issues i had before formatting my sd card and starting over were a combination of not running the node red install script and install npm separately. I also only installed Sqlite3 after the node-red-node-sqlite, i'm not sure if this will have made a difference. I had also not been running the correct install command for the node-red sql module
