Pi-Plates! I've had great luck with Pi-Plates for doing a variety of instrumentation and control tasks. They've got a pretty extensive python library so with just a bit of python you've got everything you need. I can provide more details if necessary, but I've used them to do a pretty wide variety of tasks and they've been very robust.
