I shall have to sit down and do some serious thinking about how/why I want to backup.
Is this running on RPi ?
If so the Raspberry Pi Operating System includes SD Card Copier, which can copy the running SD Card to a USB drive / other SD card in a reader etc.
You don't need to take anything offline then.
