Since version 2.1 nodered has the possibility for subflow ui elements though ENV values?
Anybody has an example on how to make this happen ?

No, it is not possible to properly manage dashboard nodes inside a subflow.
There was work looking at that, bit it has been put on hold whilst we evaluate the longer term plan for dashboard.
