I don't think it's possible with the doorbell.
Looking at the guide it details activating NAS(RTSP) in the Eufy camera settings.
But in the Eufy doorbell, the NAS(RTSP) setting does not exist, so cannot be activated

I thought the Eufy battery powered devices relied on inbuilt PIR to trigger the video recording/recognition in order to save battery power ? If that is so then I can't see how that could run RTSP unless actually triggered - unless there is an API call to wake them up (ie for live monitoring) - but presumably that drains the battery much faster ?
(Of course I'm happy to be re-educated if this is not the case (I don't own one so...))
@dceejay The doorbell model I chose was wired or battery powered, so I'm running mine as wired on 16-24VAC (from my alarm panel).
EDIT - When setting it up, you select which mode that you want it to run in, and it changes the the features available, and it's performance.
So did you get it streaming to a dvr or node red dashboard ?
I'm not aware of being able to continuously stream video. I think that you would need one of their camera's to do that.
