@dudleyjosh reading between the lines, I suspect the following...
- update done on PI (locally, at the PI)
- check using PI browser - ERROR
- Walk to desk (remote computer)
- update settings via SSH
- test UI using desk computer browser
In which case, the issue is most likely:
- Chromium on the Pi is too old (around ver 74 is would be my guess)
- same as this: Blank webpage when starting Node-Red
- Chrome / FF / Safari on your remote desktop is NOT too old
