Probably lots of 3rd party books on Node-Red you can find in a bookstore, but books about software tend to be outdated by the time they are published.
However there is an up to date book in electronic form that I have been reading
I recommend watching this playlist: Node-RED Essentials. The videos are done by the developers of node-red. They're nice & short and to the point. You will understand a whole lot more in about 1 hour. A small investment for a lot of gain.
