I am trying to install the node-red-contrib-rainbow-hat but I get the following errors:
Anybody got the rainbow head pallete working?

I think that is probably that the node is not compatible with the version of nodejs you are using. I think you are using 10.x and the node has not been updated for 2 years. I suggest raising an issue on the node's github page.
